Hey guys! It's been a while since I did a blog-post on food, and so, I'm really excited about this one. I particularly love this recipe because it is easy (which is always a plus), moist and flavorful! :)
Total Time: 3 hours 10 minutes Prep Time: 2 hours Cook: 1 hour 10 minutes Level: Easy Yield: One Loaf Meal Type: Breakfast
- 1 cup of granulated sugar
- 8 tablespoons (1 stick) of unsalted butter at room temperature
- 2 large eggs
- 3 ripe bananas
- 1 tablespoon of milk
- 1 teaspoon of ground cinnamon
- 2 cups of all-purpose flour
- 1 teaspoon of baking powder
- 1 teaspoon of baking soda (optional)
- 1 teaspoon of salt
- 1/2 cup of walnuts (I didn't toast mine, but you are free to if you prefer it toasted).
Step 1: Preheat the oven to 325 degrees, and butter a 9 x 5 x 3 loaf pan (I used a medium baking pan, not sure what the exact measurements are). Step 2: Cream the butter and sugar in a large mixing bowl until it is light and fluffy, and then add the eggs one at a time, beating well after each addition. Step 3: Mash the bananas with a fork in a small bowl. Mix in milk and cinnamon. Step 4: In another bowl, mix the flour, baking powder, baking soda (optional) and salt. Step 5: Add the banana mixture to the creamed mixture and stir properly until combined. Add the dry ingredients from the previous step, and mix everything all up until the flour disappears. Step 6: Stir in walnuts and mix properly. Step 7: Pour batter into pan and bake for 1 hour 10 minutes, until a toothpick or knife comes out clean. Remove the pan and allow it set for 15 minutes.
